Make the peanut sauce: Heat the broth in a small saucepan over medium heat. Add the peanut butter and stir until melted. Stir in the remaining sauce ingredients except the arrowroot mixture. Whisk in the arrowroot mixture and simmer, stirring, until the sauce thickens. Transfer to a bowl, cover, and refrigerate until chilled.

Combine the chicken, bell pepper, carrot, peas, green onion, and cilantro in a medium bowl.

Divide the mixed greens among four plates. Top each serving with one-fourth of the chicken-vegetable mixture. Top each salad with equal portions of the oranges and noodles (if using). Drizzle the sauce over the salads.

To Make Ahead: Prepare the sauce and refrigerate. Combine the chicken and vegetables in a bowl, cover, and refrigerate. Add the greens, oranges, and noodles (if using) as directed just before serving and drizzle with the sauce.
